Beth Simpson Roundy
Beth Simpson Roundy was born on June 30, 1935 in Hooper Utah. She was the only daughter of Francis Valentine Simpson and Fawn LaVern Belnap. She could often be found working on the farm alongside her father and brothers. She was the catcher on a County Championship softball team and would surprise you with an impressive game of catch.
After graduating from Weber High School, she attended BYU, until she decided to share the gospel, on a mission for The Church of Jesus Christ of Latter-day Saints, in the Northern States Mission. When she was serving in Peoria, Illinois she met a nice Elder Roundy and caught his eye. Upon returning home she worked at Hill Field as a secretary and married her sweetheart, Karl Nolen Roundy, in the Salt Lake Temple, on September 23, 1960.
Beth became the mother of 8 children. She would wake them with cheerful songs, listen to them without interruption, laugh at their jokes, “Bless their hearts” and do all she could to see them happy. She was their biggest cheerleader, their wonderful example of speaking kind words and how to look for the joy in the journey. Even with the big responsibility of raising her family she faithfully served in any calling that was asked of her. Her sweet spirit of service and compassion was shared with countless people over the years.
She loved the gospel and the blessings of the temple. She worked to support many of her children and grandchildren in serving their own missions and served a second mission, with Nolen, to the Navajo Nation. She served for many years as a temple ordinance worker in the Manti and Mount Timpanogos Temples. Her example and sacrifice brought countless numbers to know the joy of the gospel and enjoy the temple blessings that she loved.
The most important thing to Beth was her family. She was happiest spending time with her husband, her 8 children and their spouses, her 29 grandchildren and her 18 plus great-grandchildren. She enjoyed taco salad Sundays, Easter egg hunts, family parties and campouts. Every event was made extra special and filled with that Grandma Roundy love that she had for all.
Beth will always be remembered for her sweet spirit and kindness to everyone around her. There was not a person she met who did not leave better for knowing her. We may never know how we deserved having her in our lives, but we will be eternally grateful to a loving Father in Heaven who blessed us with such a sweet and perfect wife and mother. She was our angel on earth and now she is our favorite angel in Heaven.
Funeral services will be held on Thursday, April 7, 2022 at 11:30 am at the Harvest Hills 10th Ward, 368 West Aspen Hills Boulevard, Saratoga Springs, Utah. A viewing will be held on Wednesday evening from 6:00 to 8:00 pm at the church and again on Thursday morning from 10:00 to 11:00 am at the church prior to services. Interment will be at the Valley View Memorial Park in West Valley City, Utah.
